We Be Jammin'... Strawberry Peach Jam



Strawberry Peach Jam

Makes 5 half pints 

2 cups sliced fresh strawberries

1-1/4 cups finely chopped peeled peaches

1/4 cup lemon juice

1 package (1-3/4 ounces) powdered fruit pectin

5 cups sugar (reserve 1/2 cup to mix with pectin)

In a large saucepan, combine the strawberries, peaches, lemon juice, and sugar. Cook and stir until mixture comes to a full rolling boil. Stir in reserved sugar and pectin; return to a full rolling boil. Boil and stir for 1 minute. Remove from the heat; skim off foam if necessary. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.
